Langley Family Christmas: No bake peanut butter balls – the secret is dates

This year's recipe submissions included two peanut butter ball variations but each recipe is unique.

No Bake Peanut Butter Balls

¼ teaspoon fresh nutmeg

½ cup confectioners’ sugar (sift)

¼ cup peanut butter

2 tablespoons freshly squeezed lemon juice

1 cup finely chopped dates

In a paper bag, combine nutmeg and sugar. In a bowl, combine peanut butter, lemon juice and dates. Mix well. Form mixture into ½ inch balls.

Drop into paper bag and shake until balls are well coated. Makes about 30.

Marrianne who is originally from White Rock, and lived in Ontario for most of her adult life, where she was married and returned to school to work on her MSW, until the death of her husband, which precipitated a move to the Northwest Territories to work as director of Health and Social Services in various locations throughout the Territories, until returning to the Lower Mainland in 2014 to care for her uncle. After her uncle passed away, Marrianne returned to work and the Langley Hospice Society welcomed her to their staff team in September of this year.

This recipe is a favorite of three of her nephews, Shannon, Marcus and Chris, her sisters’ boys. For more than 20 years, no matter where she has lived these were part of their holidays requests, and for many years would arrive by mail from the Great Canadian North in time for Christmas celebrations.
